Can you freeze cheese?
As a general rule, it’s best to freeze cheeses that are designed to be used in cooked dishes rather than eaten fresh. Hard and semi-hard cheeses like cheddar, Swiss, brick cheese, and blue cheese can be frozen, but their texture will often become crumbly and mealy.
Do cheese Truckles need to be refrigerated?
Whole truckles of cheese have always traditionally been kept and matured in the open air, but most cheeses, once cut into wedges, will benefit from being kept in a cool environment such as a fridge and eaten relatively quickly.

Should waxed cheese be refrigerated?
Do I need to store your wax covered cheese in a fridge? Yes and you must always store the cheese long term in a fridge for extended periods of storage of more than a few days we recommend storage in fridge at 5°C to 8°C. Blue cheese should always be refrigerated at below 5°C or it can be frozen.
Can I freeze wax cheese?
For waxed cheese truckles, you can cut the truckle in half, use half and freeze the other half (100g portion). Simply leave the wax on the half you are going to freeze and place inside a freeze safe container to avoid freezer damage on the exposed cheese.

You should feel free to enjoy flavored rinds, washed rinds, and bloomy rinds as part of your cheese eating experience. Other rinds made of wax or cloth can generally be removed and discarded—these rinds are there to protect the cheese along its aging journey.
